Cricket Flour Muffins

Our team spent this past weekend perfecting our newest Cricket Flour baking mix, and created a delicious recipe for our Cinnamon Cricket Flour Muffins.  These muffins are packed with protein and nutrients, and taste delicious!  Look below to find the full list of ingredients and baking instructions so that you can make your own Cinnamon Cricket Flour Muffins, and let us know how they turn out!  (Makes approximately 12 cricket flour muffins)

Ingredients:

2 cups All-Purpose Baking Cricket Flour
1/2 cup water
2/3 cup milk
1/2 cup canola oil
1 tablespoon vanilla
2 eggs
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoon baking soda
2 teaspoon baking powder
1/2 cup sugar

Directions:

Preheat oven to 350 degrees F.

In a standard mixing bowl, combine all dry ingredients and All-Purpose Baking Cricket Flour.  Next, add the water, milk, canola oil, vanilla and eggs and gently mix until all ingredients are added and mixed thoroughly.

Using a standard muffin tin lined with paper muffin containers, begin adding 1/3 cup of batter to each muffin cup.

Place the muffin tin with your Cinnamon Cricket Flour Muffins on the center rack of the oven for 21-minutes.  After 21-minutes, insert a toothpick or fork to make sure the muffins are finished cooking.  The toothpick or fork should come out clean without any batter.

Once finished cooking, remove the Cinnamon Cricket Flour muffins from the oven and let stand for 10-15minutes.

Using two separate bowls, mix one with more cinnamon and sugar.  In the other, heat and melt butter in the microwave.  Take each muffin and dip the muffin top first in the butter, and then swirl it in the cinnamon sugar mix.
